Extra Low Carb Orange Chocolate Chip Muffins

This delicious treat of a recipe is adapted from the Keto Chocolate Chip Muffins one by Aaron at https://www.fatforweightloss.com.au (hint: he has lots of fab stuff on his site!) These muffins are full of yumminess, made without gluten, and perfect if you are following a Keto or low carb way of eating.

Ingredients
  • 1 cup Almond flour
  • 1 tsp Baking Powder
  • 2 large Eggs
  • 3 tbsp Unsalted butter (melted)
  • 3 tbsp Unsweetened almond milk You can also use whole milk
  • 1 tsp Orange extract
  • 1/4 cup Natvia
  • 2-4 squares 85% or more dark chocolate I use Green & Blacks 85%
Instructions
  1. Preheat the oven to 355 F (180 C) and prepare a 2x3 muffin tray by lining it with paper muffin cases.

  2. Add the baking powder to the almond flour in a bowl and mix it thoroughly so there are no lumps. Break the 2 eggs into the mixture and blend them together until totally combined.

  3. Pour the melted butter into the mixture and blend again.

  4. Finally, add the Natvia, milk and orange extract, and beat until you have a smooth batter.

  5. Pour into the muffin cases - should be about 3/4 of the way up.

  6. Using a sharp knife, cut the chocolate into shards and chips. Add them to the muffins, pushing them down into the batter. Sprinkle any remaining chocolate shavings onto the tops of the muffins.

  7. Bake in the oven for 20 mins. Allow to cool before eating (although this step can be very, very difficult!!)

Recipe Notes

You could use dark chocolate chips for this to, mixing them into the batter before pouring, but make sure that the cocoa content is at least above 70% as that reduces the sugar content.
